I bet you never thought of using prunes in your rice recipe. We love this recipe from one of our previous winner. Authentic and healthy! Give it a try! Nasi Harum Pandan Sunsweet You'll need: 3 cups Basmati rice, soaked overnight and well drained 2 tbs ghee Aromatic spices: 1 tsp cardamom 2 x 5 cm cinnamon stick 5 star anise Sliced finely: 1 large red onion 3 cloves garlic 5 cm piece young ginger 1 stalk lemon grass, white part only, smashed 1 1/4 cups pandan extract (blender 1 1/2 cups water with 30 mature pandan leaves, squeeze and strain) 2 1/2 cups water 1/2 cup evaporated milk 1 tsp salt 15 pcs Sunsweet Prunes, sliced thickly Here's how: 1. In a wok, heat ghee till melted and fry aromatic spices over low heat till fragrant. Add sliced ingredients and lemon grass, fry till slightly golden. 2. Add drained rice and fry till the grains look almost transparent. Transfer to rice cooker. Add pandan extract, water, evaporated milk and salt. Stir 3. Cook rice as normal. When rice is done, leave on warm mode for 10 minutes. Gently fluff up rice with a fork and fold in Sunsweet Prunes. Serve with your favourite curry. Original post : http://bit.ly/2wdO6aL
