Serve up a delicious dish of chicken kiev with potatoes and salad today! Ingredients: • 6 garlic cloves (2 peeled) • Small bunch of parsley • 85g of fresh breadcrumbs • 4 chicken breasts (skinless, boneless) • 4 tablespoons of garlic and herb soft cheese • 4 teaspoons of olive oil Steps: 1. Heat the oven to 200°C. Whizz together the 2 peeled garlic cloves, parsley, and 1 teaspoon of olive oil in a food processor. Add the breadcrumbs and seasoning before pulsing briefly to mix. Put the mixture onto a plate. 2. Cut a slit in the side of each chicken breast. Spoon a quarter of the cheese into each hole and press the edges together to seal. Rub 2 teaspoons of olive oil over the chicken breasts before pressing the herby crumbs onto them. 3. Place the coated chicken in a shallow roasting tin. Scatter round the remaining unpeeled garlic cloves and drizzle with the remaining olive oil. Bake for 20 to 25 minutes until the chicken is cooked and the crumbs are golden. Squeeze out the soft, roasted garlic from their skins and serve them with the chicken.
