Did you know that "chirashi-zushi" is prepared differently across the regions of Japan? In Edomae-zushi, the name refers to sushi ingredients typically used in nigiri sushi arranged on a bed of vinegared rice; however, outside of the Kanto region, chirashi-zushi is made by mixing seasoned ingredients into vinegared rice, which is then topped with a broiled egg, nori, or other forms of garnish.
