Planning on going “old school” with your dessert this Chinese New Year? Why not try something a little more traditional to usher in the new year with more prosperity and good health together? Yup! You thought right! We did mean the prosperity cake. They say 𝐭𝐡𝐞 𝐛𝐢𝐠𝐠𝐞𝐫 𝐭𝐡𝐞 𝐬𝐩𝐥𝐢𝐭 𝐨𝐧 𝐭𝐡𝐞 𝐜𝐚𝐤𝐞 𝐭𝐡𝐞 𝐦𝐨𝐫𝐞 𝐩𝐫𝐨𝐬𝐩𝐞𝐫𝐢𝐭𝐲. But first, what ingredients will we need? The traditional prosperity cakes call for yeast and a lot of prep work, but this version uses baking powder as a leavening agent and are easier to prep. The ingredients are: 180 g Radiant Organic Brown Sugar 180 ml Water 200 g Radiant Organic Unbleached Cake Flour 50 g Radiant Natural Brown Rice Flour 2 tsp Radiant Baking Powder 3 drops Red Food Colouring Let’s steam it up. Step 1: Bring the water and Radiant Organic Brown Sugar to a boil in a small pot, stirring constantly, until the sugar is dissolved. Step 2: Remove the sugar syrup from the fire and allow it to cool fully. Step 3: Sift together the Radiant Organic Unbleached Cake Flour, Radiant Natural Brown Rice Flour, and Radiant Baking Powder in a large mixing bowl. Step 4: Whisk the sugar syrup into the pot until it is completely smooth. Step 5: Stir the Red Food Colouring until it is fully combined and immediately transfer the batter to ramekins lined with paper liners, filling them until they are almost full.
