🧧🐰 Chinese New Year is around the corner and we are gearing up to hop hop hop into the Year of the Rabbit 🐰! Featuring a CNY Recipe by Lilian Lim, the 3rd Prize winner from our Masakan Malaysia Challenge 2022 with their Hoppy Bunny Har Gow Dumplings! 😋 📃 Recipe by Lilian Lim For the fillings 70g Prawns ⅛ tsp Salt ⅛ tsp White Pepper ½ tsp Sugar For the skin 50g Wheat Starch (Tung Mein Fun) 35g Tapioca Flour 85ml Boiling Water 1 tsp Garlic Oil Method For Fillings 1. Using a knife, lightly crush the prawns and place into a mortar & pestle. 2. Add in the salt, pepper and sugar. Lightly pound them until you get a rough paste. Place into a bowl and chill for 30 minutes. For Skin 1. In a bowl, mix both wheat starch and tapioca flour. 2. Add boiling water a little at a time and stir into the flour using wooden chopsticks until it forms a sticky dough. 3. Add oil and knead into a smooth, pliable dough. 4. Cover with a cloth and rest for 10 minutes. 5. Divide dough into 20g balls. 6. Using a rolling pin, flatten each dough ball into ⅛ inch thickness. To assemble 1. Place a spoonful of filling into the centre of the dough wrapper. 2. Fold skin into a half-moon shape and make pleats across the front, press to seal the edges together. 3. To fold into rabbit shape, gently press and stretch the sealed edge to about 2cm in depth, this forms the “ears”. Fold the “ears” back and snip it in half with scissors. 4. Place a piece of tiny chopped carrot on each side of the face to form the eyes. 5. Place them on a steaming plate lined with an oiled banana leaf. 6.
