As part of our 30th Anniversary celebration, we have prepared a stellar line up of chefs for this year's The Chef Series. Our fourth guest chef was two Michelin-starred Chef @mano.thevar of Thevar, Singapore who visited in June to prepare a number of exclusive modern Indian cuisine dishes at our magical rainforest resort. ⁠ ⁠ Chef Thevar created a unique Degustation Menu, exclusively for The Datai Langkawi, served at our fine dining restaurant, The Dining Room. He introduced modern Indian cuisine, by incorporating some of our ingredients sourced from the garden at The Datai, artfully infusing classical French techniques with Japanese produce and Malaysian Indian flavours to create a novel fine dining experience.⁠ ⁠ The menu started off with an array of flavorful and unique Indian fusion appetizers such as Strawberry Chaat, Chutoro Idli Caviar, Winter Truffle Kulcha, and smoked eel paniyaram. Guests were in awe to experience these gastronomical delights. One of the favorites on the menu was the tantalizing blue lobster curry beurre blanc served with masala brioche. As a wonderful end to the dinner, he prepared some fruity and sweet delights, Alfonso mango, pecan, coconut kulfi and kesari, a sweet Indian dessert that is made of semolina, ghee, sugar. These were some of his simple yet elevated dishes. The diners certainly had a splendid and enchanting gastronomical journey of culinary delights.⁠ ⁠ The next event of this year’s The Chef Series 2023 will see combined 5-Michelin starred Chef Michel and Sebastien Bras of @brasofficiel. Michel and Sébastien Bras are the revered father and son duo behind the highly esteemed restaurants Le Suquet and the eponymous Bras, both in Laguiole, France. The Bras describe nature as their essence, which bonds well with The Datai Langkawi’s DNA. They champion local produce in their cuisine, particularly the use of indigenous vegetables, and work with sustainable and ethical producers.
