Butter Chili Clams is such a great and easy dish to prepare and you can pair them easily with rice, mantou bread and even add the pasta in the mix. Ingredients needed are butter, garlic, Holland onion, curry leaves, chili flakes, paprika or curry powder, white or black pepper, cooking cream, brown sugar, chicken stock, mushroom seasoning, and last but not least, the star of the dish - clams. First, render the butter and add in garlic, Holland onion and curry leaves. Sauté the mix until the onion turns slightly brownish and add in chili flakes and a pinch of curry powder or paprika powder. Add a pinch of black or white pepper afterwards. Introduce cooking cream into the mix with a pinch of brown sugar, chicken stock and mushroom seasoning for extra oomph. Last but not least, add the star of the dish in - the clams. Cover the mix with a lid and cook them well for 5-7 minutes until the clams open. Add in a little bit of water or cooking cream should the mix become a little dry.
