Add some 好事连连 good blessings (fortune, health and luck) into your new year by making this Golden Oyster one of your reunion dinner dishes. It’s delicious, auspicious and very easy to make! Ingredients: - 12 dried oyster (soaked for 3 hours) - 12 beancurd skin (cut into 5” squares) - 3 salted egg yolks (steamed & sliced) - Oil for frying Fillings: - 300g minced pork (with 30% fat) - 200g fish paste - 3 tbsp water chestnut - 1/4 tsp sugar - 1/4 tsp white pepper - 1 tsp sesame oil - 1 tbsp chopped coriander - 1 tbsp chopped spring onions Steps: 1. Steam oysters for 10 mins then fry in oil. 2. Mix minced pork, fish paste, sugar, white pepper, coriander, and spring onions in a large bowl. 3. Lay one beancurd skin on a flat surface. Place 1 tbsp meat paste, 1 dried oyster, 2 slices of salted egg yolk, and cover with another 1 tbsp of meat paste. Roll into a tight cylinder shape. 4. Steam the oyster rolls for 10 min. Remove and set aside to cool. 5. Deep-fry oyster rolls until golden brown. 6. Slice the oyster rolls into half and serve. 7.
