Heat Up the Festive Season at Fuego, Troika Sky Dining

Smoked Eel Guacamole

The signature guacamole dishes have always been a crowd-pleaser at Fuego, which comes as no surpise as Fuego has specially appointed guacamole chefs, and puts them on rotation to maintain high quality standards with the perfect acidity balance. The new Smoked Eel Guacamole (RM35) is made with wood smoked garlic, pickled fennel, chili and smoked eel.

We loved that the guacamole was served in a traditional granite mortar, which brings an earthiness to it. The avocado dip was very flavourful and rich, with a subtle hint of smokiness; mixed with delightful little chunks of smoked eel and pickled fennel. The guacamole went along very well with the colourful crispy chips served on the side, made from sweet potato, lotus root and yam. Oh, have a taste of this highly addictive guacamole and you might never want to stop!

Snapper Creviche

Fuego is known for its South American fare with a twist, and the ceviche dishes here are not to be missed. There are two new ceviche offerings on the menu - the Snapper Ceviche and the Prawn Ceviche. We ordered the Snapper Ceviche (RM35). Cured and marinated in coriander tiger's milk made of lime juice, fresh ginger, garlic, cilantro sprigs, chilies and sliced onions; the snapper was very soft and infused with wonderfully fresh and zesty flavours.

Additionally, the konbu soaked wakame and pineapple ancho chili dressing accented the natural sweetness of the fish even more. This ceviche is the perfect snack to tease your palate with before the party really gets started with cocktails!

Cauliflower Steak

Next, we had the Cauliflower Steak (RM30), served beautifully on a board that had us exclaiming with squeals of "oooh" and "ahhhh" when it was brought to our table. Its lovely presentation, with delicate flower petals scattered all over the steak, made it into one exquisite dish.

For those of you who can't live without red meat, you could try the new Corn Beef Croquettes or the Lamb Arepa. We were quite happy with our Cauliflower Steak, a healthy alternative bursting with flavours. The vegetarian steak was perfectly grilled; with shiso gremolata, parmesan and almond soil, lemon zest and cumin toasted pistachio. We loved how the contrasting textures of the components blended together. Every bite of the steak gave us joy, from the melt-in-your-mouth parmesan to the crunchiness of the pistachios.

Grilled Zucchini

And speaking of creative vegetarian dishes, the Grilled Zucchini (RM25), drew approving nods from us as well. This dish is made with long strips of finely sliced grilled zucchini, tossed with inhame cubes and pickled baby zucchini, and drenched in generous parmesan foam.

The zucchini tasted fresh and smooth, coated with olive oil and seasoned well before grilling. The yummy inhame cubes made from yam really heightened the dish; we were left yearning for more. The frothy parmesan foam made this guilt-free dish stand out even further.

New Festive Cocktails

Fittingly, we capped off our night with cocktails. From the staff's recommendation, we ordered a flamboyant new cocktail, 'A Sunny Day in December' (RM45), and the award-winning cocktail created by Coppersmith's star bartender Affie, 'Siblings' (RM42).

A Sunny Day in December is a playful cocktail of tropical flavours mixed with warm winter spices and pine scent; contained in what looks like a Christmas bauble, adorned with a pine cone, in a wine glass filled with a mixture of dry ice and ice cubes. When the waiter served us the cocktail, he thoughtfully asked us if we wanted to take a video of him pouring water over the dry ice for dramatic smoky effect.

By comparison, Siblings has a very simple presentation, but it tastes just as lovely. This cocktail imparts three distinctive flavours. When you take your first sip, you would smell the aroma of the pandan leaf; then a strong taste of ginger will take over; and finally when it runs down your palate to the midsection of your throat, you would feel a mild burning sensation from the taste of rum. Try it and you might just love it as much as we did.

All in all, we really enjoyed our meal. The ambiance was magical, with a stunning view of the sun setting over the city's skyscrapers in front of us; and behind us, enchanting Christmas tree lights. We wished there were more portable fans strategically placed around the tables to keep us cool during the humid night, but we're just nitpicking here. Our overall experience was very positive. The serving staff were very friendly and interested in our feedback on the dishes.
